- Its textured and structured nature characterizes this Sauvignon Blanc. It boasts intense aromas of freshly picked asparagus and crisp snow peas, complemented by the tropical allure of dried pineapple, invigorating citrus zest, zesty grapefruit, and subtle hints of warming ginger spice.
This wine was made following a philosophy of minimal intervention. The grapes were carefully selected before undergoing a five-day cold soak. The whole berries underwent seven-day spontaneous fermentation with indigenous yeasts for both alcoholic fermentation and malolactic conversion. The grapes were then pressed straight to French Burgundy barrels without settling, where the wine underwent six months’ maturation on the fine lees. It was bottled without fining or filtration, which may result in a subtly cloudy appearance, adding to the charm of this wine.
A textured and structured Sauvignon Blanc, with intense aromas of asparagus and snow peas, underpinned by tropical notes of dried pineapple, citrus zest, grapefruit, and hints of ginger spice.

Winery | The grapes for this wine come from the single vineyard site of Crouch Valley Vineyard, which is situated on the coastal peninsula of Crouch Valley. Positioned on rolling hills overlooking the Crouch River Estuary, the vines are planted between the River Crouch and River Backwater, where the microclimate is moderated by the surrounding water. The vineyard was planted in 2006 and is south-facing to optimize sunshine in the capricious English climate. The area is generally well-protected from frost and has low rainfall, producing high-quality fruit. The clay soils are cool, with good water retention properties to nourish the vines through the warm summers. The Sauvignon Blanc grapes from the double Guyot trained, Vertical Shoot Pruned (VSP) vines are handpicked into small crates at optimum maturity. |
