- This wine is a delightful blend crafted from the Encruzado grape variety, offering a symphony of invigorating flavours. It presents a complex interplay of zesty lemon balm, fragrant orange blossom, and succulent white fruits with layers of vibrant citrus. A refreshing, crisp finish skillfully counterbalances the wine's creamy texture. The winemaking process involved destemming, gently crushing, and pressing the grapes, followed by a 48-hour cold decantation at 10°C. The fermentation process unfolded in stainless steel tanks at 16°C over a three-week period. A portion of the must was then transferred to barrels for fermentation and ageing, creating a harmonious complexity. A delicate bâtonnage was performed in the vats and barrels following the fermentation process to enhance the wine's texture.
The grapes were destemmed, lightly crushed, and gently pressed. The juice was then decanted for 48 hours at 10°C. Fermentation occurred in stainless steel tanks at 16°C and lasted for three weeks; part of the must was transferred to barrels, where the fermentation and ageing took place. At the end of the fermentation, light bâtonnage was carried out in the vats and barrels to impart texture.
A refreshing, elegant wine from the Encruzado variety, showing complex notes of lemon balm, orange blossom and juicy white fruits, with layers of citrus. It's creamy but beautifully balanced by a crisp finish.

Winery | The Dao region is located in Beira, central northern Portugal, flanked by the mountain chains of Caramulo, Montemuro, Bueaco, and Estrela, which offer protection from the prevailing winds. Within this basin configuration, a wide range of micro-climates is strongly influenced by relatively steep valleys carved out by the Mondego, Alva, and Dao Rivers and their numerous tributaries. The vineyards range from 200 to 700 meters above sea level, and the white varieties are planted on elevated, terraced slopes, where they benefit from cooler microclimates. The wide diurnal temperature shifts of up to 20°C ensure the fruit is endowed with ample natural acidity; Dao wines are renowned for their freshness. The soils are granite-dominated sands, with feldspar, quartz, and mica particles that sparkle in the vineyards. They are lean, free-draining, and relatively infertile soils, which force the vines to struggle, resulting in complex wines. The vines are cultivated sustainably and are pruned according to the double cordon, simple cordon, or Guyot, with the method tailored to control the vigour to ensure the best quality. The grapes are manually harvested. |
