- A full-bodied style of Viognier with creamy notes of peach, hazelnut, and lime jelly is packed with flavour. Inmacula, in Latin, means without blemish, and this is a lovely, clean, bright wine with perfumed aromas of jasmine and apricot and an elegant mineral touch. It is expressive, long, and has a creamy, mineral finish.
This wine was vinified following organic principles. The grapes were harvested at night to retain freshness, and after several hours of pre-fermentation maceration at 10°C, the must was racked. 100% of the Viognier was fermented in 300-litre French oak barrels, while the Viura was fermented in stainless steel. Daily bâtonnage lasted for four months, adding texture and complexity. Tandem's winery is built partially underground to create a gravity-fed winery with minimal wine stress.

Winery | Tandem's vineyard philosophy is based on sustainable farming and minimal intervention while maintaining the vineyard's health and viability. The natural conditions of the valley ensure that pesticide treatments can be kept to a minimum and take the form of sulfur and copper, avoiding products made from synthetic chemicals. The vines are dry-farmed and undergo a green harvest to obtain lower yields, which is a key factor in achieving a greater concentration of the berries. The vines are trained using the Guyot method and are grown in clay loam soils. Harvesting occurs at optimal ripeness and during the coolest hours of the day so the grapes retain their freshness. |
