The Sauvignon Blanc grapes came from selected vineyard parcels, which showcase more fruit-driven aromas. They were hand-picked, destemmed, and gently crushed into a press. The juice was allowed to settle naturally over 12 to 24 hours without additives. Fermentation took place in stainless steel tanks to retain the purity of fruit, between 14 to 16°C, with selected yeasts. Regular stirring imparted texture. The wine was aged on its fine lees following fermentation for four months.
This deliciously refreshing Sauvignon Blanc offers notes of freshly picked apricot, ripe pear, lime, and orange blossom with a hint of fynbos and dried herbs. It is long and fruity.

Winery | The estate is positioned on the narrow Cape Peninsula, where the confluence of sea breezes from the cold Atlantic Ocean, less than one mile away, and the southeasterly breezes from False Bay create ideal conditions for the slow grapes ripening. They also help to keep the vines healthy and diseases at bay, reducing the need for treatments in the vineyard. When the winds are strong, they also control the vine’s vigour and encourage a second suckering. The nearby ocean influences the wines and shapes the beautiful mountain on which the estate rests. The Noordhoek amphitheatre was carved from the Silvermine mountain over time. As a result, the soils of the estate vineyards became rich with decomposed granite, limestone and kaolin, which imbue the wines with the signature mineral quality. |
