- A citrus palate with bright acidity and creamy lees, Fosil is aged in concrete and 500L French oak barrels. It is sourced from Zuccardi’s Estancia Place vineyard within the IG San Pablo. At 1400 m.a.s.l. and only 300 meters from the Cordillera, the first range of the Andes mountain, the wine has been influenced by its extremity. Sebastian describes this as a wine born from the unrepeatable combination of cold weather, calcareous soil, and Andean breezes from one of the highest areas of the Uco Valley.
The 2021 vintage was exceptional, and the climate conditions allowed us to harvest each region, variety, and soil type at the time we were expecting. Spring was generally humid (not necessarily rainy, but humid, with dew and points that were higher than average). It has been a year of cool temperatures during the whole week of January, and moderate temperatures are always below average. The same thing happened during February and March. However, this was a year of high luminosity.
